The Balmoral, a Rocco Forte Hotel

At 1 Princes Street, Edinburgh, the clock on the Balmoral’s 1902 tower runs three minutes fast; just enough to ensure travellers don’t miss their train at Waverley station. Olga Polizzi has incorporated the blues of the Hebrides, heather and a Balmoral tartan woven especially for the hotel, alongside plenty of Scottish art, into the suites, including one named after J.K. Rowling where she finished the Harry Potter series. The Graven studio has refurbished the rooms using wool, tweed, leather and Scottish oak. At Brasserie Prince, Alain Roux combines French classics with Scottish produce in a dining room designed in collaboration with Martin Brudnizki.
