San Domenico Palace, Taormina, A Four Seasons Hotel

The San Domenico Palace is housed in a former Dominican convent in Taormina, with narrow passageways and 14th-century cloisters lined with palm trees. The Italian-style garden slopes down towards the ancient theatre, with Mount Etna and the Ionian Sea visible in the distance. At the Bar & Chiostro, the ‘En Plein Air’ cocktail – made with citrus fruits, passito and wild nepitella – pays homage to the work of Wilhelm von Gloeden, the town’s photographer. At Principe Cerami, Massimo Mantarro transforms parmigiana into an aubergine raviolo. Climb the slopes of the volcano with a volcanologist, then return to Rosso to re-fuel with an arancino alla catanese.
