In the heart of the wild, surrounded by a garden planted in 1895, with its hundreds of varieties of fruit, vegetables, mushrooms and flowers, stands a Victorian manor house, an extinct volcano in the background. The interiors, with the gleams and depths of a country house, all wood and leather, their panelling shaped by vernacular materials, form a true contemplative haven. Only seven keys make up the residence, affording intimacy and symbiotic grounding, in the manner of a singular dialogue with the surroundings. The setting invites exploring what lies nearby – hikes through forests and hills, or swimming with dolphins. The table follows the day's pickings, for a meal that distils a stay where building and surroundings are as one.
