Siem Reap, Cambodia
At the gateway to Angkor, Phum Baitang – meaning “green village” in Khmer – spans 20 acres of rice paddies, gardens, and sugar palms, featuring 45 stilt villas inspired by traditional Khmer farmers' homes. Life on the estate revolves around two venues: Bay Phsar, open from early morning until evening, where herbs, vegetables, and rice are sourced partly from the hotel’s own kitchen garden and paddies; and the more upscale Hang Bay, dedicated to Khmer culinary traditions. Be sure to try the minced pork grilled with lemongrass, served with steamed aubergine, miso paste, basil, and water spinach leaves. As evening falls, enjoy the view over a Margarita in the fading light, or indulge with equal relish in a wood-fired pizza by the pool. The lasting impression is that of a singular village with a multifaceted character.
