Longjing tea owes its flat leaf to the hand that presses it against a scorching wok, in the hills above Hangzhou. Below them, West Lake was drawn as much as dug: as governor of the city, the poet Su Dongpo had its silt dredged and built from it a willow-planted causeway that still crosses the water. Near the Lingyin temple, Feilai Feng carries Buddhas carved into its limestone. After a night of snow, the Broken Bridge earns its name: the arch thaws first at its crown, and the bridge appears cut in two.
