The jimador does not harvest blue agave so much as shave it: with the coa, a rounded blade on a long handle, he cuts away the leaves one by one down to the heart, the piña, which is then slow-cooked in stone ovens around Tequila. In the highlands of Los Altos, the same agave grows in red clay, and the spirit no longer tastes the same. At Teuchitlán, the Guachimontones raise round, stepped pyramids, each ringed by platforms. Beneath the dome of the Hospicio Cabañas, in Guadalajara, Orozco painted a man in flames, and benches allow one to look up at him lying down.
