Aman Rosa Alpina brings the Dolomites indoors with timber, stone, open fires and great expanses of glass, and mountains that never quite leave the picture. In the heart of San Cassiano, high above the valley, the old language of the Alpine chalet has been stripped back. The lobby is quiet and pared down; the suites are all clean lines, generous glazing and views that do most of the decorating. Wake to the peaks outside the window, then step straight into the landscape. A heated pool sits among the conifers below, while the trails and mountain roads around San Cassiano are made for walking, skiing and cycling. At The Grill, the menu follows the fire, from fish and meat to fresh pasta and pizzas from the oven, with the village church tower just beyond the terrace. Il Salotto is the place to linger afterwards for coffee and something small during the day, cocktails later on, then the piano as evening settles in.
