In the heart of historic Cuzco, not far from the Plaza de Armas, stands a property with a multifaceted past, its bells crowning the entrance archway. Inca stonework gave way to a palace, which later became a Jesuit institution and a convent, and remains a place of hospitality to this day. Amidst a succession of courtyards, gardens, and cloisters, guests can really inhabit this special setting, and while the rooms themselves offer a sophisticated take on their origins as monastic cells - albeit on a far grander scale - the communal areas retain the warmth and generosity of spaces designed for gathering and celebration. At Hypnôze Spa, some treatments incorporate medicinal herbs from the adjoining botanical garden, while the original Inca structural remains are visible beneath one’s feet. The estate’s connection to biodiversity extends to the menu, where at Mauka, chef Pía León highlights indigenous seeds, grains, tubers, and plants in dishes like her paiche featuring notes of the high jungle, cocona fruit, rough lemon, and yuca. It offers a singular perspective on the Andean nation, both on and off the plate.
