In Hong Kong, granite breaks the surface right beneath the skyscrapers. The city climbs vertically between the harbour and the Peak, stacks its towers, its escalators and its markets, then stops short: beyond, the greater part of the territory is hills, trails and beaches. The Star Ferry crosses the harbour in a few minutes, Sheung Wan dries its fish and mushrooms on the pavements, and on Lantau a bronze Buddha watches the sea from its mountain. Lunch is dim sum amid a clatter of crockery, and at weekends one walks along ridges from which the city looks small.
