Colonnades, palms and terracotta tiles give this seafront address the air of an Arab-Andalusian palace, a world away from the city beyond its gardens. The sense of arrival is deliberately grand; beyond the landscaped grounds, the lobby opens beneath an immense octagonal dome, its gold-leafed ceiling rising above a sea of marble. The suites bring the same grandeur down to a more intimate scale, as beige tones, timber panelling and deep carpets create the feel of a private residence, with Moorish details woven through the interiors. At Sea Fu, Hokkaido scallops come with trout roe, leeks, kimchi sauce and leek oil – an elegant interlude in a day by the water. Come evening, Mercury Bar offers a view in two halves: the Gulf stretching endlessly in one direction, Dubai’s lights shimmering across the skyline in the other.
