Mandarin Oriental Jumeira, Dubai

Set between the sea and Dubai’s skyline, this is a hotel with a distinctly maritime character. At the entrance, a luminous forest of bronze trees, studded with lights and crystals, leads the eye through the lobby, while the suites take a softer approach: marble warmed by oak, shades of blue and natural fabrics, giving them the feel of elegant seaside retreats. On the horizon, the Burj Al Arab rises almost like a lighthouse at the edge of the harbour. Inside, the design looks further east, drawing together Arabian and Asian references in an imagined Silk Road of painted panels, carved furniture and ornamental details. At Tasca, José Avillez offers a more unexpected counterpoint: a distinctly Portuguese reading of the sea, from Algarve prawn ceviche to pastel de nata, served warm from the oven. Beneath the golden canopy of the lobby, the afternoon has a slower rhythm. Tea, coffee, conversation – and nowhere in particular to be.
