Royal Champagne Hotel & Spa
Champillon, France
In Champagne the grapes are picked by hand, as the rules require. The rest happens underground. In Reims, the crayères cut into the chalk since Roman times hold the bottles at an even coolness, while above ground the coronation cathedral raises its façade of carved limestone. The Montagne de Reims carries its vines on its flanks and its forest on the plateau, where the Faux de Verzy, beeches with twisted limbs, open out like umbrellas. The Côte des Blancs has little but chardonnay and villages of pale stone. Each bears the name of its wine, unless it is the other way round.
