In Champillon, overlooking the UNESCO-listed hillsides of Épernay, the Royal Champagne is built around a former 19th-century coaching inn frequented by the kings of France and Napoleon. Its Joséphine Suite retains the name of Napoleon’s Empress. Sybille de Margerie has extended the coaching inn with a contemporary wing, with windows looking out over the vineyards towards Champillon and Hautvillers. The hotel opens up the cellars of neighbouring winegrowers, and Christophe Raoux’s cuisine can be enjoyed on a viewing terrace where the butler lays out focaccia and cheeses with a view of the vineyards.
