A round tower of lava stone, open to the sky, shelters a single orange tree: on Pantelleria the garden defends itself against the wind, and the porous stone holds the night's moisture for the tree. The zibibbo vines, for the same reason, grow low, each in a hollow scooped out of the earth. Noto, rebuilt on a new site after the earthquake, chose a soft limestone that turns the colour of honey in the evening sun. In Modica, chocolate is worked cold, in the manner the Spaniards brought back from Mexico: the sugar never melts, and crunches between the teeth.
