The Mexican cocoa bean is not very well known and it is precisely because of its history and its roots that I wanted to work on it and make it known to everyone. The origin goes back to the era (from 2000 years JC) of the Olmecs, the Aztecs and the Mayas who lived in Mexico and Central America. It is the whole history of Mexico that I try to tell in my creations.
Daniel is the co-founder of La Rifa Chocolateria; a project focused on the transformation of cacao into chocolate. La Rifa makes chocolate from the cacao bean (Theobroma Cacao), in an artisanal way and of the highest quality, ensuring the every single grain can be traced back to the source for responsible agriculture. The cacao is cultivated in different communities such as Comalcalco in Tabasco, Pichucalco, and the Lacandona Jungle in Chiapas, mainly. Once the cacao is transported to the city, it is selected, roasted, ground, and refined by La Rifa's team.
For this Immersion, guests will have the choice between: 1) Meet with Daniel at La Rifa to understand the process of chocolate making itself. Learn about the history and process of this seed, its various origins, the cacao plantations, the agroforestry systems, and the importance of biodiversity, as well as the post-harvest processes carried out by Mexican cacao producing families. 2) The second experience is a chocolate tasting with Mezcal pairing, followed by a class by Daniel, during which he will teach the guests how to make their own chocolate.
