Harbouring a passion for food preparation and service from the tender age of 12, it is at the age of 40 that Leslie would fulfill his life-long dream of earning his degree in baking and pastry arts at a Chicago technical college. A year later, he studied at the prestigious La Varenne Ecole du Cuisine, before taking on the post of Pastry Chef at a Relais & Châteaux property in California. Leslie opened a European-style bakery and pastry shop in La Paz and in 2015, the Carmona family moved to San Miguel de Allende.
Culinary heritage of Mexico
This Lartisien immersion last for 3 hours. This experience is the perfect opportunity for you to explore the culinary heritage of Mexico in the company of Chef Leslie. The experience will highlight pre-Hispanic ingredients and preparation methods of Mesoamerican kitchens. During your stroll you will be able to enjoy five dishes in five well-chosen restaurants that best reflect the foods of the Maya, the Aztec, and Spain’s royalty. Dishes includes such delicacies as quesadillas with huitlacoche, Mayan Tamales, and Aguahille among others.
