Splendido, A Belmond Hotel, Portofino

Perched above the harbour of Portofino, the Splendido occupies a 16th-century Benedictine monastery which Baron Baratta acquired in the 19th century and transformed into a family summer residence. The Baratta Sedici bar retains its name, set amongst hand-painted botanical frescoes and bespoke furniture. At La Terrazza, Corrado Corti sources seasonal Ligurian produce from La Portofinese, the eco-farm on the protected hill above Cala degli Inglesi, with its olive groves, beehives and vineyards. A pesto-making class is held on the premises, and a kayaking trip will take you up to an 18th-century Ligurian mill.
