Armed with the traditional Mayan customs and techniques dating back from generations ago, Rosalia is a chef who has mastered the preparation and cooking of the very best Mayan food. Her culinary journey began when she started preparing tortillas for the locals, and today, she has cooked for some the best Chefs in the world who have travelled to Yaxunah to learn from her. One of Rosalia`s main purpose is to share her knowledge. Her love also extends to Yucatan itself, having been her home and the cradle of so many traditional cooking techniques and recipes.
For this Lartisien Immersion, Chef Rosalia Chay invites you to enjoy a lunch in her home. Guests will have the chance to observe Chef Rosalia prepare lunch, which include such dishes as the Sikil Pak sauce: roasted pumpkin seed, with a first course of Panuchos, followed by a main course: of cerdo pelon al recado negro (hairless pork cooked in the pib with black recado), Cochinita Pibil (slow cooked pork in a red recado), handmade tortillas, salsas. The immersion ends with the chance to take a picture with Chef Rosalia Chay.
