In 1974, Christine and Michel Guérard created the art of light cuisine at Les Prés d’Eugénie, inspired by the surroundings of the house: the thermal springs, the vegetable garden, the heirloom roses and the water garden. Michel Guérard passed this culinary heritage on to his teams and his family: his daughters Adeline and Éléonore oversee artistic direction, whilst Hugo Souchet, whom he trained, runs the flagship restaurant. The baths at the Ferme Thermale spa draw from the same millennia-old springs, and dinner is served in the Salons de l’Impératrice.
